Tell us about The Beaufort. It’s a nautical-themed dive bar with rad drinks, heaps of spirits, a pool table and legit burger game.

Mayonnaise, ketchup, mustard or all?  ALL – and add Coney Island Mustard to that. It’s pretty much all three in one.

Where does The Beaufort turn to for inspiration? Don’t imitate. If you’re going to do it, go to the other side of the world, not the other side of the city.

According to The Beaufort, what makes the perfect burger? Fresh beef, the right bun (fuck your brioche, sugar is for candy), house pickles and consideration for the construction of the burger. The order of each element from top to bottom alters the experience wildly. We’ve thought about everything and eaten every permutation, taking us to over 1,200 burgers to get to the perfect morsel that we present today.

How do you tackle the challenge of competing in a food hub like Melbourne?  We run a cool thing called Burgerpalooza every Tuesday. We run a burger deal with a tinnie for $12 for tight-fisted students but we get a guest chef to make a burger every week. Everyone from chefs at the world’s 50 best restaurants, Embla, The Lincoln, Shannon from Smith and Daughters, Jimmy from Jimmy’s Burger. Basically all the chefs that drink here make us a recipe and we put it on for one night only.

What is the right way to stack a burger? That’s where the money is. You’ll have to come and deconstruct it yourself.
