A deliciously moist tea cake with the bonus health benefits found in matcha.

Ingredients

Tea cake

  • ½ cup of unsalted butter, softened
  • 1 cup of caster sugar
  • 1 ½ cup of all-purpose flour
  • 2 eggs
  • 1 tsp of baking powder
  • ½ tsp of salt
  • ½ cup of full cream fresh milk
  • 2 tsp of matcha powder
  • A handful of white chocolate chips or buttons

White chocolate matcha ganache

  • 100g of white chocolate chips
  • ¼ cup of heavy cream
  • 2 tsp of matcha powder
  • Shaved white chocolate for garnish

Method

  1. Preheat the oven to 160°C (180°C fan-forced).

  2. Cream the butter and sugar until it’s light and fluffy.

  3. Add eggs, one at a time to the batter.

  4. Combine the flour, baking powder and salt in a bowl. Mix it well.

  5. Incrementally add the flour mixture and milk to the batter, starting and ending with the flour mixture.

  6. Add in the matcha powder until it’s combined.

  7. Throw in the white chocolate chips.

  8. Pour the batter into a greased loaf pan. Tap the pan on the countertop to release any air trapped within.

  9. Bake for 50 — 60 minutes. Let it cool in the pan for 15 minutes before removing it completely. Allow the loaf to cool completely before glazing.

  10. For the glaze, bring the heavy cream to a boil.

  11. At the same time, melt the white chocolate chips completely using a microwave.

  12. Pour the heavy cream into the bowl containing the matcha powder, bit by bit. Whisk it until it’s free of lumps.

  13. Finally, pour the mixture into the melted white chocolate, bit by bit.

  14. Pour the ganache over the matcha loaf. Shave the white chocolate all over the loaf. The glaze should set in about half an hour.

The cake can be kept in an airtight container for up to three days in room temperature. If you refrigerate the cake, let it sit in room temperature for 10 minutes or so before serving.
