Melbourne Italian bar Bianchetto becomes immersive dining experience with live truffle hunting this month.
Bianchetto has transformed its Melbourne bar into a living truffle forest for a Mister Bianco month-long truffle celebration.
Until August 30, Italian wine and cocktail bar Bianchetto will become an immersive truffle forest as part of Mister Bianco’s month-long celebration of the prized funghi. The Kew venue will offer guests the chance to forage for truffles alongside a resident dog, enjoy Chef-Restaurateur Joe Vargetto’s five-course degustation, and potentially win a truffle to take home.
The collaboration with Buxton Black Truffles represents more than a decade of partnership between Vargetto and the truffle specialists. Bianchetto guests will navigate through carefully designed tree-scapes, foliage-strewn groundcover, and mossy mounds to reach their dining tables. Throughout the week, Buxton Black Truffles’ Robert Utter and his Brittany Spaniel, Clara, will make appearances during service, bringing the authentic truffle hunting experience directly to diners.

Vargetto has curated every aspect of the installation, including partnering with French cookware brand Staub to debut their White Truffle Tableware collection exclusively at the event. The venue will feature an on-site truffle shop where guests can purchase the tableware alongside fresh truffles, truffle slicers, and Staub’s wider collection of cast iron cocottes and French ovens.
The exclusive $145 Truffle Month tasting menu at this Melbourne bar showcases the funghi’s umami depth across every course. Dishes include creamy truffle-infused risotto and crispy duck breast with generous truffle shavings. The limited seating accommodates just 28 guests nightly from Wednesday through Saturday.
The month concludes with Mister Bianco’s ninth Annual Truffle Dinner on Wednesday, 27 August. This sell-out event features Vargetto and Utter guiding guests through a bespoke five-course menu including truffled gnocchi with chestnut mushrooms and stracciatella, and a truffle tiramisu eclair. The evening includes Italian and Australian wine pairings, with one lucky guest receiving an entire truffle as a prize.
The theatrical experience promises surprises throughout the Melbourne bar, with Vargetto describing it as a way to bring the excitement and discovery of truffle hunting to Melbourne’s dining scene.
