Simon Blacher is back on Chapel Street with one mostly Greek restaurant.
Halo is taking over Windsor’s 1925 Fonda building this spring/summer, with talent from Elia Greek Tavern and Sydney’s Olympic Meats running the grill. Pita is getting the made-to-order treatment on Chapel Street, where Halo is setting up inside a 1925 Windsor building.
Halo is the next project from Simon Blacher, who co-founded Hanoi Hannah and has spent the last 14 years founding and running a Melbourne hospitality group. Now he’s scaling back to a single venue, in the same Windsor neighbourhood where it all kicked off. His new mostly Greek restaurant and bar moves into the heritage building on Chapel Street that was previously home to Fonda.

Blacher isn’t going it alone. Nick Vas and Greg Stanogias both join from Elia Greek Tavern, and head chef Evan Georgopoulos comes south from Olympic Meats in Sydney’s Marrickville. The menu draws on the crew’s own Melbourne and Greek upbringings. Their focus is simple cooking done properly, with hospitality coming first.
Open flames do most of the work in Halo’s kitchen. Skewers come straight off the grill, while the gyros run on recipes the team has tested over generations. Pitas are made in-house and only cooked once someone orders them. The mezze and dips will rotate with the seasons, so the spread you get in December won’t necessarily be the one on the table a few months later.
Out on the floor, the venue is set up around generous tables and old-school taverna hospitality, which makes it one for the bigger group bookings. That puts Halo alongside a growing number of Greek venues across the city, and if you need somewhere to eat before the doors open, our guide to the best Greek restaurants in Melbourne has a few places worth a look.
No exact opening date has been announced yet, with Halo flagged for spring/summer. Booking details and opening hours hadn’t been released at the time of writing.
