A Melbourne cult vinyl store is relocating to this sultry new Italian dive bar

Melbourne hospitality legend Con Christopoulos plans to open two new Italian-inspired venues in the CBD.

Roma and Sergio’s will transform a Collins Street courtyard space with authentic Roman dining and a sophisticated dive bar experience, right here in Melbourne.

The venues represent Christopoulos’s latest addition to his impressive portfolio. Additionally, the trattoria takes inspiration from London’s River Cafe, whilst the dive bar draws from Italian cinema heritage.

Chef Matt Wilkinson joins Roma to create a menu focusing on Roman classics with seasonal Victorian ingredients. Christopoulos has partnered with small Victorian farmers to grow bitter greens and other vegetables unavailable in Melbourne.

Sergio’s takes its name from Italian filmmaker Sergio Leone, known for classics including The Good, the Bad and the Ugly and Once Upon a Time in America. Similarly, the bar’s architectural details draw inspiration from Leone’s home in Rome.

Dance music legend Greg Molinaro will relocate his Abbotsford record shop Hub 301 inside Sergio’s. Hub 301 specialises in brand-new house, techno, disco and soul records.

Molinaro previously operated Rhythm & Soul in Prahran from 1992 to 2008 before the internet disrupted the industry. Nevertheless, he founded Hub 301 in 2016 following the emergence of vinyl-first culture in house and techno scenes.

A kiosk offering gelato and toasted sandwiches will bridge the two venues, ensuring accessibility for all customers. Furthermore, Christopoulos emphasises creating an inclusive environment. He hopes Roma and Sergio’s will bring something truly new to Melbourne, noting the city deserves more high-quality Italian restaurants.

Christopoulos brings decades of experience to this project. Indeed, his portfolio includes The European, Melbourne Supper Club, City Wine Shop, Siglo, Angel Music Bar and Butcher’s Diner. Additionally, he recently opened Bossa Nova Sushi with Victor Liong.

The courtyard location at 120 Collins Street, Melbourne, provides an intimate setting between office towers and heritage buildings.

Christopoulos’s vision extends beyond traditional restaurant concepts. Furthermore, the venues celebrate Italian culture through multiple mediums. Additionally, they acknowledge Melbourne’s substantial Italian heritage whilst introducing fresh perspectives.

Roma and Sergio are set to open in December, 2025.
