This April, DOLLY at Le Méridien Melbourne will commemorate Jazz Appreciation Month by bringing back its sell-out live jazz dinner shows, announcing a weekly line up of performances scheduled across the month, culminating with a grand finale event, The Grand Jazz Dinner Show.

Set beneath the bustle of Bourke Street, DOLLY has established itself as one of Melbourne CBD’s most in-demand destinations for live jazz after dark. The moody underground European restaurant and late-night cocktail bar has made a ritual of pairing dinner, supper and crisp cocktails with a lineup of the city’s best jazz acts — quickly becoming a sell-out series so popular that its original April 2025 event was extended into an ongoing ritual, building a loyal and ever-growing following.

In 2026, guests can expect performances from one of Melbourne’s best live jazz acts, The Night Creatures. However, it’s not just the music that keeps the jazz enthusiasts coming through the door. At the centre of it all is Bordeaux-born, Michelin-trained Executive Chef Hervé Borghini, whose menu of elevated bistro classics transports guests to a night out in Paris.

Think signature Steak Frites, Confit Duck and the adored Flaming Bombe Alaska with caramelised popcorn, salted caramel ice cream, and a fluffy meringue kissed by flames.

An indulgent champagne and caviar service adds to the sense of occasion, accompanying a curated wine list.
